In Provençal, pastis means “mixture”. Licorice, green anise, star anise, fennel, sometimes cinnamon, cardamom, pepper or even sage... In all, more than 65 plants and spices picked, macerated, distilled and blended have made pastis the iconic drink of the South of France, created in the 1920s as a consequence of the absinthe ban. (Alcohol should be consumed with moderation)
