Provençal baking skills
The flavours of the Mediterranean are all brought together in the fougasse. It is the very essence of Provence. Originally, it allowed the baker to make sure that the wood-fired oven was at the right temperature before putting the bread in the oven. On the Valensole plateau, Benoît Henocq, a farmer baker, bakes it with herbs, olives, bacon... hoping to pass on the torch and his passion for bread to his children.
