In Auvergne, the soil and the flora of the mountains give all its personality to one of the oldest French cheeses: Cantal.
Its history goes back 2000 years, when the farmers of Auvergne, subjected to the climate and the constraints of the relief, decided to make a cheese large enough to last until the end of the winter.
