A few miles from Raiatea, on the island of Taha'a, Polynesia's black gold (Tahiti vanilla) is cultivated. More than 80% of the vanilla tahitensis - the aromatic compounds sought after throughout the world - is produced here. Its fertilization is done manually, according to a method that requires attention and experience.
Once obtained, the pod is then picked up still green and exposed in the sun for four months, so it can transform into the very aromatic black pod.
