Veraison is the penultimate stage in the grapevine’s vegetative cycle and corresponds to the moment grape berries change colour. In a few days’ time, red wine grape berries change from green to red, and those of white grape varieties from opaque green to translucent green. In Burgundy, veraison occurs late July to early August. The winemaker then watches their vines closely, as veraison indicates the degree of ripening of the grapes, and therefore the date of the harvest.
