After Epernay and Reims, the Grand Cru village of Aÿ-Champagne is one of the main centres of the Champagne wine industry. Only seventeen villages in the Champagne region have been awarded this appellation. This classification is based on criteria of soil, slope, and exposure. Aÿ-Champagne is home to about twenty-five winegrower-manipulators, as well as the oldest cooperative (Cogevi) in Champagne. To produce its brand – Champagne Collet – Cogevi is supplied by some twenty communes, i.e. about 800 hectares of vines, most of them classified Premier Cru or Grand Cru.
