Green harvest is a crop thinning method used by some winemakers. By limiting their yield, it allows them to increase its quality. From mid-July, before veraison, the winemaker thins out the vines by eliminating excess green clusters, which promotes optimal concentration and maturity for the remaining grapes. However, the process is controversial and other winemakers prefer letting their vines regulate themselves.
