The Cantal PDO cheese is molded in the shape of regular cylinders with rounded edges in two formats. The large format weighs 77 to 99 lbs (35 to 45 kg) and has a diameter of 14 to 16.5 in (36 to 42 cm). The small format of Cantal is 7.8 to 8.6 in (20 to 22 cm) in diameter and weighs 17 to 22 lbs (8 to 10 kg). The ripening period of Cantal cheese is another distinctive criterion that determines its name. It ranges from one to two months for a Jeune (Young) Cantal, three to seven months for an Entre-Deux (In-between), and at least eight months for a Vieux (Old) Cantal.
