Perfumery replaced tannery as the main activity of Grasse from the 16th century. The workers of the town's distillation plant then poured liters of flower hydrosols (rose, lavender, jasmine) into the water of La Foux spring, which flowed in the fountains of the village, therefore, called the perfumed fountains by the people of Grasse. The rebirth of the eponymous estate and its transformation into a site of olfactory creation from 2016 substantiates the city's heritage.
