The distillation of the lavender necessary for producing essential oil imposes a relative concentration of the cultivated areas. The distilleries must be established within a reasonable radius for the transport of the flowers to be distilled, and their investment is amortized over a certain number of hectares. It is in southeastern France that the production of plants for distillation is the most significant. The region currently has ninety-one independent or cooperative distilleries mainly dedicated to the production of lavender and lavandin essential oils.
