In the distillery, the flowering stems of pre-wilted lavender are delicately put into the vats using forks. Each vat contains about 1,102 pounds (500 kilos) of lavender, which will produce approximately one liter of essential oil. The lavender is then packed in the vats by trampling against a metal grid with chains for about an hour. The farmers would then have to extract the juice (separate the oil from the water) and empty the tanks.
