The white wine called Chablis is produced around the Chablis area, but also chardonnay. In this northernmost and coolest region of Burgundy, Chardonnay thrives there and has a fresh and mineral profile. It is also the only Burgundy region that does not cultivate Pinot Noir. In Côte de Nuits, Pinot Noir represents nearly 90% of the vineyards. Burgundy has 33 AOC Grands Crus and 24 are located in the Côte de Nuits, including the famous Romanée Conti. In the Côte de Beaune, the whites (Meursault, Puligny-Montrachet) as well as the reds (Pommard, Corton, Volnay) are produced there. The Côte Chalonnaise has long been in the shadow of its other neighboring regions but continues to assert its character with white and red wines. Finally in the Mâconnais, Chardonnay represents 85% of the production of the vineyards.
