In the Côte de Nuits vineyard, the cutters harvest the sun-ripened bunches. Well sweetened they will give powerful wines, the sugar content influences the alcohol level. The maturity of the grape can be assessed 100 days after the appearance of the first flower, however many climatic and viticultural factors can vary the date of maturity of the grapes.
