Just like budburst (emergence of buds protected by their flocks in the spring) or flowering, véraison (ripening) constitutes a crucial phenological stage in the life of the vine. In the red grape varieties, the grains clearly transform from green to red, while white grape varieties soften to become almost translucent. It is the sap from the leaves that carries the sugar to the grapes and makes them ripen for 30 to 45 days. During vine harvest, the cutters will be careful to choose only the finest grapes to avoid overripe bunches.
