The baous vineyards of the Nice hinterland date back to Roman times when, 2 000 years ago, the Romans planted the first vines and the first olive trees around the oppidum built to watch over the Var valley. This terroir resembling Tuscany was ideally planted at the foot of the baous, which protected it from the north winds, and on hillsides exposed to the south. Archaeological remains have been found at the Collet de Mourre, where the Collines Hautes vineyard extends, attesting to this ancient presence.
