The mussel and oyster farms have invaded Utah Beach, famous for having welcomed the landing of the first wave of Allied forces on June 6, 1944. Mollusks are raised there on bouchot, a form of culture invented in 1235 by the Irish traveler Patrick Walton. Victim of a shipwreck in the Baie de l’Aiguillon, in Charente-Maritime, he survived by fishing with nets and noticed that the stakes planted in the sea to hold his nets were covered with mussels. He then multiplied the stakes and baptized his invention bout and choat (wooden fence), which became 'bouchot'.
