A patient and cautious selection

Once the time for harvest has been decided, winemakers already proceed twice to a selection of the grapes. The picker eliminates the rotten grapes to keep only the good bunches that are pre-sorted on the tablet in order to remove the grains that would have escaped the eye of the pickers. It is important for the quality of the final product that only noble grains are selected. The grapes then go through a scraper that eliminates stalks but also leaves, petioles, and other unwanted foreign bodies.
