Since the 19th century, the cultivation of watercress has spread throughout Normandy. This winter salad is rich in vitamins and has record iron, calcium, fiber, and phosphorus levels. Sold from September to May, watercress depends on spring water and grows without pesticides or herbicides. For 18 years, the Mahieu family has been operating the last watercress farm in Veules-les-Roses. An old mill provides fresh water from the Veules in the basins where the salad thrives.
