Saliculture is one of the main activities in the Camargue region where it extends over an area of more than 34,595 acres (14,000 ha). The Compagnie des Salins du Midi is a company that brings together several owners of the Aigues-Mortes saltworks, united under this name since 1868, with an annual salt production of 500,000 tonnes. This large production capacity makes the Salins du Midi a true worldwide reference. The reputation of the Aigues-Mortes saltworks comes from the fleur de sel of Camargue, salt crystals with a fine and crispy texture that particularly reveal the flavors of the dishes they accompany.
