The mustard harvest is a crucial step in the condiment-making process. It must occur at a strategic time when the plant has been exposed to the sun long enough to start producing the selenium responsible for the spicy taste of the condiment and before the first rains damage the pods. After harvesting, the pods are left to dry and shaken to extract all their seeds. Harvesting can also be mechanical using a combine harvester equipped with a blower reel.
