A production through water circulation

The main fleur de sel (sea salt) production activity at the Aigues-Mortes salt marshes happens in summer when it is possible to make the most of optimal sunshine. Such particular conditions allow water evaporation and salt crystallization under the combined actions of the sun and the wind. The production of sea salt is carried out in several stages and starts with water circulation between five consecutive basins. Seawater is pumped and collected in the first basins and then circulates from one basin to another to increase its salinity rate as it goes. After a circuit of several tens of kilometers, the brine is brought to reserve basins. The salt is finally harvested in the salt tables or crystallizers, the last basins with a salinity rate of 260g of salt per liter of water.
