Alain André carries out many activities in order to maintain the Haute Valeur Environnementale (High Environmental Value) label of his farm. Since he took over, he has managed 123 acres (50 ha) of meadows, harvesting hay to gather winter food for his 40 Montbéliard cows, all born on the estate. Alain André only hired people to make the three PDO cheeses (Cantal, Bleu d'Auvergne, and Salers) produced at the farm. He also created two other cheeses given local names. The Saint-Timothée mountain tomme bears the name of the patron saint of the church overlooking the farm, while the Petit Pignou was baptized after the farm itself.
