In the heart of the Auvergne Volcanoes Regional Nature Park, just outside Murat (Cantal), the Auvergne PDO cheese route takes you to the Grange de la Haute Vallée farm. This family farm has a remarkable barn with a vaulted roof made of oak beams assembled in the shape of an overturned boat. This hull roof or “Philibert” roof – named after its inventor Philibert Delorme, a Renaissance architect – increases the useful volume of the building. The barn is equipped with hatches that allow the hay to be passed into the stable, which houses some forty Montbeliarde dairy cows.
