Famous for its small size and recent creation, the locality of Bellefontaine on the Caribbean coast of Martinique is also renowned for its gastronomy based on local products. Clinging to the cliff, it has retained the character of a fishing village with its small port full of multicolored gum tree boats. On the beach, traditional seine fishing still takes place around the net pulled by the fishermen and volunteers ready to lend a hand in exchange for a few coulirous and sauries (balaous). The fruit of this participatory fishing is immediately consumed fried and enhanced by products (lemons, peppers, aromatic herbs, etc.) from the market gardening developed on the fertile and green heights of the Verrier district.
