The geographical configuration of the territory of the municipality of Gassin reduces its possibilities of agricultural exploitation. Until the middle of the 19th century, Gassin's cultures, which occupied only 6% of the land in 1840, followed a traditional Mediterranean pattern with the triple farming of wheat, vines, and olive trees. The exploitations of cork and of mulberry silkworms jointly developed in the 19th century until occupying almost three-quarters of the soil in the 20th century. Today, vines, olive trees, and cork oaks constitute the main crops of Gassin.
