A whole fauna and flora, adapted to this particular environment, lives in the salt marshes and gives them that pinkish to red color that we observe here in the 'Vieux Salins' of Hyères. Dunaliella salina, for example, is a microalgae which, under the osmotic pressure of hypersaline environments, accumulates glycerol and protects its chlorophyll with red pigments which limit light penetration. Salicornia, which grows at the edge of saltwater lagoons, changes color to red at the end of summer. As for Fabrea salina, a colorless protozoan which lives in very salty waters, once dead it gives off a very strong orange-red fluorescence. Finally, pink crustaceans such as Artemia salina are famous for serving as food for the flamingos, which are numerous in the 'Salins d'Hyères'.
