Organic certification and process

The 220 acres (89 ha) of vineyard of the Château La Tour de l'Évêque estate in Pierrefeu-du-Var have been certified in organic farming since 2008. The practices implemented there give pride of place to biodynamics, horse plowing, manual harvesting, sorting in the vineyard, and massale selection (sampling and replanting of vine stocks). At the estate, the wine-making process is done by gravity and pressing in whole bunches.
