Lavender occupies steadily increasing space on the Valensole plateau but still leaves room for the cultivation of cereals. Since the lavandin plants die after eight to ten years of cultivation and those of lavender after six to eight years, it is important to change the crops so that the old roots do not pollute the new ones. Lavender and lavandin are generally replaced for four to five years by wheat that is harvested just before them, allowing the agricultural activities to be spread over time.
