The appropriate time to harvest lavender is very precise. The plant should not be harvested too early in summer because the essential oil must have had time to rise in the plants, but the harvest should not be too late either as the flower, too wilted, might shatter or suffer from bad weather. Lavender should be cut in full heat when it secretes the most essential oil as a defense mechanism and when the morning dew has evaporated.
