Fabrice Genin, a farmer in Marsannay-le-Bois in the Côte-d'Or department, is a producer of mustard seeds. Also president of the Association des Producteurs de Graines de Moutarde de Bourgogne (Association of Producers of Mustard Seeds of Burgundy), he carries high the colors of this culture relaunched in Burgundy in the 1990s by chairing the Fédération Départementale des Syndicats d'Exploitants Agricoles (Departmental Federation of Farmers' Unions (FDSEA) of Côte d'Or). Once widespread, the cultivation of mustard seeds had made Dijon's reputation since the Middle Ages before a sharp decline in production linked to the globalization of the trade and to the competition from countries with higher yields.
