A port made famous by anchovies

The city of Collioure has preserved a thousand-year-old history that has been a constant source of inspiration for many painters over time. However, one of the main responsible for the Catalan port's fame and fortune is the anchovy, honored by an annual festival since 2016. The salting of anchovies has indeed made the reputation of Collioure since the late 19th century and early 20th century. Though the number of companies had drastically reduced since then, the fish benefited from a resurgence after the Algerian War. Today, only two companies responsible for the transmission of the anchovy-related know-how are left in the town.
