On the Valensole plateau, the lavender fields have gradually replaced wheat. The reason for such choice is more economic than aesthetic: the demand has increased over the past decade, and lavender sells for much more than cereals, the prices of which have fallen sharply. Even if the general trend leans towards monoculture, a share of cereal cultivation is maintained to replace the lavender crops which die after six to ten years. Cereals, and especially wheat, generally take over for four to five years in order to regenerate the soils and purify them of old roots.
