The Maison Marguet champagne estate has used draft horses since 2010. The horse constitutes a link between the minerals (chalk soil), the vegetals (vines and endemic plants), and man. The farming yield is obviously slower than with a tractor, with one row instead of three, but the soils benefit from the horse-man cooperation. Less compressed, their microbial life is more abundant and diverse. The quality of the soils' increase also enhances that of the grapes, which fill with the aromas and minerals of the ground.
