For the past few years, Benoît Marguet has embodied one of the most dazzling success stories of the Champagne region. This young winemaker is an adept of geobiology in his cellar and biodynamics in his vineyard dedicated solely to Grand Cru appellation, in Ambonnay and Bouzy. His approach is one of great respect for nature, even if the yield is lower. He has reintroduced the use of draught horses to work the land in his vineyards in order to respect and enrich the soil. Sulfites are kept to a minimum and dosages are prohibited. Nevertheless, he produces nearly 90,000 bottles per year.
