Nicknamed the 'poor man's fruit', the jackfruit is a tropical fruit rich in slow sugars, fibers and nutrients. It is particularly renowned for its content in potassium, B vitamins and proteins. Its fibrous texture resembles that of chicken or pork which it replaces in vegetarian dishes. While its arils can be eaten raw, its chestnut-flavored seeds must be roasted or boiled to lose their toxicity.
