A cider with strict specifications

"Pays d'Auge" cider acquired the Controlled Designation of Origin (AOC) in 1996. It now shares this designation with that of Cornouaille in Brittany. Strict specifications allow its manufacture, and the apples must come from plots identified in the Pays d'Auge. A list of 49 varieties of phenolic and tart apples falls under this label. The cider must be obtained with 70% bitter and bittersweet apples and 15% sour apples.
