Since 2010, the Maison Marguet champagne estate started exploiting its vineyards with horses again. The Ardennes or Percheron draft horses are trained to feel the vine stock under their hooves and avoid them, unlike tractors that tend to crush them. The horse's steps also aerate the soil and favor its richness. At the Maison Marguet estate, the grapes bunches are exploited through gravity instead of pumping and thus keep their tannins. The wine later ferments in barrels almost without any sulfites. The Maison Marguet estate received the Demeter label for the quality of its champagne wines.
