The épinette is a pruner with thin blades suitable for the work of the cutter. It is easy to slip into the vine to cut only the peduncle at the base of the bunch. A good cutter must be able to pick up to 2,204 lbs (1,000 kg) per day. Timing is essential in the harvest, and the cut bunches must be transported as quickly as possible in order to avoid any fermentation that would spoil the taste of the wine. The grapes should not be taken too early because the juice will be acidic, nor too late as sugar would overpower the aromas.
