From August, the winemaker meticulously observes each parcel of land. He looks, tastes and takes a few grains. He checks that the fruit has the right amount of sugar and has lost acidity the first few days. Fruit should not be picked too early or too late. Depending on the specifics of his terroir and its grape varieties, the winemaker will determine when the harvest can begin.
