Saint Hippolyte is dominated at the rear by the Castle of Haut-Koenigsbourg. It is home to rich vineyards that have made its reputation. Saint-Hippolyte is an old village surrounded by a well-preserved rectangular enclosure. It has been mentioned in different forms in the archives during its history: Fulradovillare, Sant Bildt. An old landmark, located on the slope of the Kochersberg, still bears the initials S.B. Fulrad, founding abbot of the city, supposedly brought the plants of vines that grow on the slopes of Langenberg.
