On the edge of the scrubland where pines, cistus, and heather reign, the Fontfroide vineyard stands on sandy clay soils. This terroir is renowned for its freshness. As the Latin name of the nearby source suggests — fons frigidus — the red and white grape varieties ripen more slowly there. The grapes thus develop intense and unusual fruity aromas. The vines have been cultivated since the founding of the abbey by the monks, who have selected the best plots and orientations over time.
