The stages of draining cheese
Draining cheese from coagulated milk, also known as curd, involves several phases. The first step consists in separating the gelatinous mass into grains to release the whey by multiplying the exit surfaces. It is followed by a stirring and possibly heating phase in a tank. They precede the pressing stage and last until obtaining the desired consistency.
