Distillation is a technique that relies on the evaporation of the water vapor and its ability to soak up essential oils. The plants to be distilled are placed on a perforated tray in the upper part of the tank of the still filled with water brought to a boil. The fragrant principles of the plants permeate the water vapor that is then entrained in a coil and in a refrigerating system where it condenses. The obtained essence is then naturally separated thanks to the variation in the fluids' density, and the essential oils collected on the surface are used in perfumery.
