At the northern tip of the lagoon of Salses-Leucate is the commune of Leucate, an oyster farming village. Surrounded by wild nature, its sheds in a row and colorful terraces catch the eye. The oyster farming tradition there dates back to the 1960s. The local species is called the Caramoun and is farmed in suspension under oyster breeding tables. A wind turbine triggers the table, recreating the movement of the tides. It allows the oysters to regularly stay out of the water, stimulating their growth.
