The oyster is a bivalve mollusk whose consumption is very ancient. It dates back to prehistoric times. It is adored by the Greeks and Romans, who start breeding them by establishing the first oyster breeding parks. ​Those same parks are found today on many French ponds. It was in the 19th century, however, that the first oyster farming techniques were developed in France, under Napoleon III.
