The origins of the Laguiole knives

The origin of the first Laguiole knives dates back to a merger between two models. The ‘Capuchadou’ was a knife with a sharp and fixed blade on a piece of wood used in the Aveyron department. The ‘Navaja’ was a pocket ratchet knife of Spanish origin, brought to the region by pilgrims from Santiago de Compostela. Following the evolution of the Laguiole knife according to the needs of the populations, the first cutler settled in the village in 1829. From 1880 the quality of Laguiole cutlery was recognized throughout France.
