As apple cultivation developed in the Middle Ages, Normandy became the orchard of France. Many varieties were found in the region, such as the court hanged red apple invented in 1423, the Colapuy brought by the Crusaders, or the red-starred Reinette whose heart, in the shape of a cross, refers to the Bible. There were nearly 3,000 in the 19th century before returning to 150 today. The La Galotière distillery in Crouttes tries to preserve ancient species in order to restore the taste of yesteryear to the ciders of the Pays d'Auge.
