After Epernay and Reims, the Grand Cru village of Aÿ-Champagne is one of the main centres of the Champagne wine industry. Only 17 villages in the Champagne region have been awarded this appellation. This classification is based on criteria of soil, slope, and exposure. Aÿ-Champagne is home to about 25 winegrower-manipulators, as well as the oldest cooperative (Cogevi) in Champagne. Champagne Collet, the Cogevi brand, is supplied by some twenty communes, about 800 hectares of vines, mainly in Premiers and Grands Crus.
