The vines have already been pruned and the top bunches have been removed in favor of their counterparts closer to the foot, intended to be more beautiful. The leaves that cover them have also been removed so that the sun can make the tannins flourish. Once harvest time comes, usually in September in the Burgundy vineyards, the cutters are sometimes paired up so that the more experienced ones supervise and advise the novices. The choice of the bunches to be cut is indeed essential for the future quality of the wine.
