The harvest starts when the winegrowers select the mature samples. The picking and cutting of the grapes are carefully put in baskets that can weigh more than 44 pounds. The grapes are then sorted out on large tables. According to the color and the texture of the fruit, the men and women will select the best. They will then pass into a press to then be placed in huge vats in order to proceed to the long fermentation.
